Chicken Apple Sausage, Potatoes, Pepper and Onions

This was our first dinner on Whole30 - what a great way to kick off 30 days!  I found a similar recipe online that used Chorizo sausage which looks so yummy that I adapted it with Chicken sausage.  This was great for the whole family and perfect for leftovers.  I topped it with a fried egg for breakfast.  

Ingredients:
  • 1 package Chicken Apple Sausage, sliced (I used Applegate)
  • 3-4 medium white potatoes
  • 2 tsp olive oil
  • 1 medium onion, chopped
  • 1 red pepper, diced
  • 1 green pepper, diced
  • red chili flakes (optional)
In a medium saucepan add the washed potatoes and cover with boiled water from your kettle. Add a pinch of salt to water and cook for 5 minutes.  Drain and cool on paper towels.  Cut into 1/2 inch cubes when potatoes have cooled and set aside.

In skillet add olive oil and than add onions ad cook until soft.  Add chicken sausage and cook until browned and than remove from skillet.  

Add more oil if needed and cook potatoes until they are crispy and golden on all sided.  Return the sausage and mix well with potatoes.  Add peppers and cook for 5-7 minutes until soft, mixing all the ingredients together.  Add salt and pepper and red chili flakes if liked.
