Week 2 of 21 Day Fix: Turkey Sloppy Joe's

Week 2 of 21 Day Fix. I hadn't done the 21 day Fix personally in a year so I decided to do it with this with the latest group I have and they have been so motivating and inspirational that they help keep me on track.

My goal wasn't so much weight loss though I was still holding onto a few pounds leftover from the holidays  - my reason for doing the 21 Day Fix was to bring my eating back into the proper portions and balance.

The biggest change for me the last 10 days has been cutting down on my carbs. The key to this program is not only portion control BUT eating a well balanced diet throughout the day.  I am such a carb girl that if I was hungry I would go for the crackers, rice cakes, larabars, etc.  Now I am allowed 2 yellow containers a day (that equals 2 carbs) so what has happened is I'm reaching for a piece of fruit or some cut up veggies with hummus as opposed to that carb option.  I feel so much better.   The good news is I have lost those few holiday pounds that stayed on way past the holidays and my pants are back to comfortably citing but more than that I feel on my game with my eating once again and that's a nice feeling.  I workout all the time BUT you have to do the work in the kitchen as well and this program really shows that.

As a family we are all eating healthier even the kids lunches are better!!  I'm slowly adding recipes to my new site but here are a couple that have been huge hits with my family.

Monday we had turkey sloppy joes and roasted broccoli.  I roast the broccoli at 400 degrees for about 15 minutes and squeeze fresh lemon juice on top and sprinkle a little parmasen cheese on top.  My husband and kids were fighting for the last serving.  Seriously, how often does that happen in your house?  It was music to my ears.  :)


Turkey Sloppy Joe’s

(Makes about 8 sloppy joe’s – depending on how “sloppy” you like them)
Ingredients
• 1 tbsp. olive oil
• 1-1/2 lbs. lean ground turkey meat
• 1 (15 oz.) can organic tomato sauce, no sugar added
• 1/2 cup ketchup
• 1 tbsp. garlic powder
• 1 tbsp. onion powder
• 1 medium red bell pepper, diced and chopped finely (I used the food processor so my kids won't see the pepper)

Directions

Spray non-stick spray on pan and, add the turkey meat and cook over medium
heat. Once the meat is cooked, add everything else. Stir until well blended and
heated through.Scoop however much you want onto a whole grain hamburger bun or sandwich thin.
