- 2 chicken breasts, roasted and shredded
- 1 cup grated cheese (I used mozzarella)
- 2 avocado, diced
- 2 Tbsp chopped cilantro
- 1 Tbsp dijon mustard
- 6-8 whole wheat or whole grain tortillas
- non fat plain greek yogurt
- non-stick spray (I use the Misto)
Place chicken, cheese, avocado, and cilantro in a large bowl. Add 1 tbsp of mustard and mix everything together. Spread a thin layer of non fat plain greek yogurt on each tortilla and add a scoop of the chicken/avocado mixture, roll into a burrito.
Spray non stick spray (or olive oil spray) on fry pan and heat pan over medium flame. Place burritos in pan and cook 2 mins on each side or until the tortillas are golden.
Serve warm.
You can serve with a simple mixed green salad and/or black beans.
