Jersusalem Salad

Ingredients:

  • 1/2 red onion, diced
  • 1 large tomato, diced
  • 1 cucumber, seeded and diced
  • 1 cup chopped parsley
  • 1/4 cup fresh mint, chopped
  • 1 cup white vinegar
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/4 tsp pepper
  • 1/2 tsp sea salt
Put chopped onions in small bowl and cover with 1 cup of white vinegar and let sit for 5 mins. and drain.
Add tomato, cucumber, parsley, mint and onions and mix in a large bowl.
In small bowl whisk together lemon juice, olive oil and salt and pepper.
Toss dressing over the salad and mix gently.
