It's not Tuesday but it's still Taco Night in my house!

I love Mexican food and tacos are typically on our family's meal plan a few times during the month.  And here's the best news Mexican food can be healthy!!  You just have to be smart about your choices!!  If you go out for Mexican, the first thing you HAVE to do is tell your waiter NO CHIPS!!  Let's face it none of us can stop at one or two chips!!  And NO margaritas!!!

Also, stay away from the burritos, enchiladas, and hard shell tacos.  Some good choices are shrimp, fish or chicken tacos on corn tortillas with no cheese or sour cream but you can enjoy guacamole (a spoonful).  Another good choice is chicken or shrimp fajitas but skip the tortillas and enjoy the meat, peppers and onions.

BUT let's talk about taco night at my house and why it's a GREAT choice for the whole family and fix approved!!  I use ground turkey and I make my own taco seasoning.  You can make a bunch ahead of time and store it in a small tupperware.

21 Day Fix Southwestern Seasoning

  • 1 Tbsp chili powered
  • 2 tsp ground cumin
  • 1 tsp coriander
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp smoked or regular paprika
  • 1 tsp sea salt

Mix all the ingredients together.  I triple the recipe and store for future use!

Use lettuce leafs instead of tortillas and if you most have tortillas choose whole-grain or corn.  I top with salsa, a little reduced fat shredded cheddar, tomatoes, sliced avocado and non-fat plain greek yogurt. Taco night can be any night . . . it's not just for Tuesdays! :)
