Baked Italian Eggs
Modified recipe is from Damn Delicious
And they are darn delicious!!  Nothing makes a mom happier than hearing her kids say how great something tasted!!  These were a hit. 

Makes 2 servings and it's easy to double if needed:

  • 4 eggs
  • red sauce - I always have a jar of Rao's in the pantry.  It's the bomb!! 
  • 1/4 cup lowfat milk
  • 1/4 cup cheese; (Parmesan, mozzarella, provolone), I used 4 cheese mixture from Trader Joe's
  • non stick spray
Preheat oven to 400 degrees.
Spray 2 ramekins with non-stick spray and pour red sauce on bottom, crack 2 eggs in each dish on top of sauce, pour in milk and top with cheese.  Bake in oven at 400 degrees for 15-20 minutes depending on how hard you like your eggs.  Serve with crusty bread or toast for dipping.
21 Day Fixers:  1 Red, 1 blue, 1/2 green and 1 yellow if you have slice of bread. :)
