New Twist on the Burrito

We eat Mexican at least once a week if not twice.  What I love is most Mexican food can easily be adjusted to be clean and healthy!  Some of my favorites are lettuce wrapped turkey tacos, healthy chimichangas and simple burrito bowls.  Last night I made chicken avocado burritos and got the thumbs up as everyone was to busy eating to talk! :)

I found this recipe online of a website called omgchocolatedesserts and with a couple tweaks I made a healthier version and it can easily fit into the 21 Day Fix plan.


Ingredients:

  • 2 chicken breasts, roasted and shredded
  • 1 cup grated cheese (I used mozzarella)
  • 2 avocado, diced 
  • 2 Tbsp chopped cilantro
  • 1 Tbsp dijon mustard
  • 6-8 whole wheat or whole grain tortillas
  • non fat plain greek yogurt
  • non-stick spray (I use the Misto)

Place chicken, cheese, avocado, and cilantro in a large bowl.  Add 1 tbsp of mustard and mix everything together.  Spread a thin layer of non fat plain greek yogurt on each tortilla and add a scoop of the chicken/avocado mixture, roll into a burrito.
Spray non stick spray (or olive oil spray) on fry pan and heat pan over medium flame.  Place burritos in pan and cook 2 mins on each side or until the tortillas are golden.
Serve warm.

You can serve with a simple mixed green salad and/or black beans.
