Simple Burrito Bowl

These are super easy and super yummy! I used ground chicken because I love how moist it is but sometimes it's hard to find so you can totally use ground turkey breast.


Ingredients:

1 package ground chicken or turkey
1 1/2 tsp chili powder
1 tsp oregano leaves
1/2  tsp cumin
1/2 tsp garlic powder
1/3 cup chicken broth
1 dash sea salt
8 oz package of frozen corn
1 can black beans, drained and rinsed
1 tomato, diced and chopped
1 avocado, sliced and diced
2 cups cooked brown rice

Directions:

Spray pan with non stick spray and heat.  Add meat and cook on medium heat until throughly cooked - break up meat into small pieces.  Add chili powder, oregano leaves, cumin, garlic powder, salt and chicken broth and mix.  Cover and simmer for 10 minutes.

Cook brown rice according to directions. Heat corn and black beans. 

For the bowls:
Place 1/2 cup of rice in each bowl and top each bowl with 3/4 cup meat, 1/4 cup corn and beans, diced tomatoes, avocado and salsa.  Optional toppings: shredded cheese, dollop of non fat plain greek yogurt or sour cream.  

Makes 4 servings
