Creative Lunchbox Ideas

It's that time of year again . . . . LUNCH BOXES!!!  I have two kids that won't eat sandwiches and one that is tired of turkey sandwiches and I can't blame him since that is what he ate almost everyday last school year.  So I started out the first week of school trying out some new ideas.  These are great for lunch boxes BUT also for snacks!!


Chicken Cordon Blu Quesadilla

It's so simple - ham, turkey & swiss cheese!!!  It's so good!!

  • 1 slice ham
  • 1 slice turkey
  • 2 slices swiss cheese
  • 2 tortillas 
Heat pan up and spray with olive oil (misto).  Place tortilla in the pan and place 1 slice of cheese and layer ham and turkey and other slice of cheese.  Place tortilla on top and spray with olive oil.  Flip and cook until brown and melted.  


Pizza Quesadilla

Marinara Sauce, mozzerella in between two tortillas! :)  Anything with the word pizza in it is a HUGE hit in my house!



Pizza Buns

These were such a BIG hit I had to hide them so there would be some left for the next days lunch!

  • pizza dough (I buy mine from Trader Joe's or Whole Foods)
  • pizza sauce
  • pepperoni or any toppings you like 
  • mozzarella cheese

Preheat oven to 350 degrees.

Roll out the dough onto a lightly greased or floured surface to prevent dough from sticking.  Roll dough into long skinny rectangle.

Start layering your pizza ingredients.  Begin by spreading the sauce, and then layer meat and cheese (you can be as creative as you want).

After all your pizza toppings have been added begin rolling up the dough starting at one end of the rectangle and pinch the edges to seal.   Cut 1 - 1 1/2" thick slices with a serrated knife (I sprayed the knife with non stick spray to avoid any sticking).  Place on baking sheet covered with parchment paper or in a greased baking dish.  Bake for 25-30 minutes or until golden brown.

NOTE:  You can freeze and have them on hand for quick go to lunch!


Mini turkey meatball sandwiches

I made Crockpot Italian Turkey Meatballs the other day for dinner and then made mini meatball sliders the next day for lunch!
