A Health Spin on Fried Rice

Who doesn't like fried rice?!  But let's face it the kind you get out is loaded with salt and oil and white rice . . . . not what you should be eating.  Here's a healthy spin on fried rice that's easy to make and so yummy!  And it's 21 Day Fix approved!

Ingredients:
  • 3 cups brown rice 
  • 1 lb ground turkey
  • 1 TBSP sesame oil, divided
  • 1 TBSP canola oil, divided
  • 1 cup frozen peas
  • 1/2 cup chopped carrots
  • 1/4 cup diced onions
  • 2 large eggs
  • 3 TBSP low sodium soy sauce
  • salt and pepper to taste
Cook rice and set aside.  In a large skillet heat 1 1/2 tsp sesame oil and 1 1/2 canola oil over medium heat.  Once hot, add ground turkey and sauté and break up into small pieces until no longer pink.  Transfer to separate bowl.  In skillet add remaining 1 1/2 tsp sesame oil and 1 1/2 canola oil to pan and add onions, peas and carrots and sauté for 3-4 minutes, stirring frequently. Add garlic and sauté   Push vegetables over to side of pan and crack to 2 eggs into side of pan, scramble and cook.  Return ground turkey and rice to pan and add soy sauce and mix and sauté for 2-4 minutes.  Serve and enjoy!
Serving size: 4 servings, 1 cup
