Who would have thought something so easy would be so amazing. This could be breakfast with some mixed berries on top (add 1 💜), a healthy snack with a spoon of vanilla non fat greek yogurt (add an extra 1/2 ❤️) or as a sweet treat with a 1-2 tsp of mini chocolate chips OR just eat it plain and it's amazing!!
I think I need to go stock up cans and cans of pumpkin!!! :)
Paleo Pumpkin Cake
- 1/2 can of pumpkin puree (or 1 green container)
- 1 egg
- 2 tsp raw maple syrup or stevia
- 1 tsp of pumpkin pie spice
Mix everything in a bowl and spray a ramekin or microwave safe dish with coconut nonstick spray and microwave for 5 minutes. Be careful, it's hot coming out of microwave. Let cool a few minutes before eating. ENJOY!
