Green Hummus

Have you ever been to Tender Greens?  If you live in Southern California you want to try it!!  It's a farm to fork restaurant with great salads, roasted vegetables, sandwiches and all sorts of yummy food.    My favorite thing on the menu the Happy Vegan plate.  It's three salads - red quinoa salad, a farro salad with cranberries and hazelnuts, a bulger wheat salad and the BEST green hummus EVER!!  I've actually found the recipes for all the salads as well as the hummus and served them for a brunch I did over the holidays.

The green hummus is such a hit at home that I often make it for my family to enjoy through the week.  I love to slice multi grain bread and grill it with some olive oil and sea salt and serve it with the green hummus but you can also serve the hummus with cut up veggies and chips.

Ingredients

2 cups spinach
1 cup arugula
1/4 cup cilantro
1/4 cup diced green onion
2 small cloves of garlic
1 cup olive oil
4 cups garbanzo beans, drained and rinsed (2 cans)
1/4 cup lemon juice
salt and pepper

Directions:

In food processor, combine spinach, arugula, cilantro, green onion & garlic.  With the processor running, slowly add the olive oil and than start to add the beans.  You may have to make the hummus in batches depending on your size food processor.  Fold everything together in a large bowl, add the lemon juice and seasodn with 1 1/2 tsp of salt and 1 tsp of pepper or to taste.  This makes a generous 5 cups of hummus.
